Ramadan is a spiritually rejuvenating month where we fast from sunrise to sunset. Eating appropriate meal at suhoor should include counted calories divided between the following: starch, protein, healthy fat, and fruits may be added. 

Below are a few ideas for suhoor:

Vegetable skewers with chimichurri

Marinate vegetables such as capsicum, peppers, cherry tomatoes, and mushrooms in olive oil, garlic and fresh herbs. Thread them onto skewers. Add oil to a pan and fry vegetable kebabs until tender and slightly charred on each side. Serve them with chimichurri sauce.

Corn and tomato salad

Combine charred corn kernels with tomatoes, onion, and oriander. Dress with a squeeze of lime juice, olive oil, and black pepper. 

Yoghurt parfait

Make a simple yoghurt parfait using yoghurt, oats and fruits.

Sandwitch

Layer slices of leftover chicken, fresh mint or lettuce and cream cheese between slices of bread. Butter the outside and cook in a pie iron over the fire until golden and crisp. The result is a delicious, smoky, creamy sandwich that’s perfect for suhoor. You can also make sandwitch with Nutella and banana slices.

Omelette

Add vegetables such as spinach, mushrooms and tomatoes into your omelette with a spray of olive oil.
